J. Hollinger’s Waterman’s Chophouse is Silver Spring’s latest dining destination. The latest creation from chef and restaurateur Jerry Hollinger features chophouse classics, a raw bar, fresh seafood, and hyper-seasonal local produce, using only the finest ingredients from around the globe.

Just as a “waterman” is a skilled boatsman with a wealth of knowledge and experience, the J. Hollinger’s team carries with them decades of expertise and a standard of culinary excellence. Founder Jerry Hollinger takes pride in hand-selecting the finest produce available, traveling each week to historic farms in Maryland and Pennsylvania. Our singular goal is to procure the very best ingredients and prepare them in a way that enhances their incredible flavors.

The focus on using only the best ingredients takes the J. Hollinger’s culinary team everywhere from the Chesapeake Bay for local seafood, cattle farms in Texas for 100% certified black angus beef, all the way to Iceland for sustainable sea salt that is geothermally formed in the fjords. Each item on our menu has been carefully crafted and carries a unique story, with a blend of haute cuisine and playfulness.

In addition to the bold, fresh flavors that can be found on the menu, diners enjoy an inviting ambience in the modern-rustic dining room, featuring live music each week. The Daily Dish is a play of words that reflects the passion of its owner, Jerry Hollinger, who believe in serving comfort food with a twist — food that is seasonally inspired, locally sourced and farm fresh.

The Daily Dish is the winner of the RAMMY Award for Favorite Gathering Place and Everyday Casual Brunch, and a Finalist for Casual Restaurant of the Year. Bethesda Magazine calls them The Restaurant Dream Team.

Jerry, the executive chef and owner of The Daily Dish and The Dish & Dram., was born in Ephrata, Pennsylvania and has a Mennonite background. His parents owned Hollinger Market, a grocery store that focused on locally sourced and natural foods long before the concept really existed.

He grew up with a love of cooking and after working as a private chef and then a line cook and sous chef for Jean Michel in Bethesda, he started his first business, a boutique catering company. He enjoys making wholesome food that is reminiscent of family dinners surrounded by his parents and six brothers and sisters.
In 2016, Jerry opened The Dish & Dram in Kensington, MD. The Dish & Dram reflects their love of food, drink and travel and reminds them of their favorite places to eat around the world.

Jerry has now brought his passion for food to Downtown Silver Spring. J Hollingers will combine his passion for sourcing the best local products with a high-end dinner experience that everyone can enjoy.
